[Official Guide] Dietary Policy: Vegan, Gluten-Free, Allergy-Friendly Dining | Keiryuso Siorie
Nestled in the mountains along the route connecting Matsumoto and Hida-Takayama, Keiryuso Siorie is a small, quiet boutique ryokan with just eight guest rooms. Because of our intimate size, we place the highest priority on providing warm, personalized hospitality tailored to each individual guest.
In recent years, travel dining needs have become increasingly diverse—including vegan, vegetarian, halal, gluten-free, and severe food allergies.
"We want our guests to relax and enjoy the beautiful nature and hot springs of Shinshu with complete peace of mind when it comes to their meals."
With this vision, supported by Matsumoto City’s Food Diversity Initiative and advised by industry experts at Food Diversity Inc., we continuously refine our recipes and kitchen operations to offer specialized meal options upon advance reservation.
This guide outlines our culinary philosophy and official dietary policy to ensure a safe, delicious, and memorable dining experience for everyone.

1. Seasonal "Local Creative Food" at Keiryuso Siorie
"Enjoying delicate, beautiful Japanese cuisine in a relaxed, cozy atmosphere."
Crafted by Executive Chef Mitsuaki Nozoe, our signature creative Kaiseki dining captures the spirit of Shinshu (Nagano) and Hida through seasonal local ingredients.
Green Season (April 17 – November 15)
Vibrant creative dishes featuring fresh high-altitude vegetables and clear-stream delicacies, showcasing the energy of nature.
Winter Season (November 16 – April 16)
Warm creative Kaiseki honoring the historic Buri Kaido (Yellowtail Highway), where seafood was historically carried over the Nomugi Pass from Toyama Bay to Matsumoto. Enjoy a fusion of fresh Japan Sea seafood and mountain delicacies.

For vegan, vegetarian, and gluten-free accommodations, we carefully select locally grown Shinshu vegetables, mushrooms, tofu, and grains based on expert guidelines. We create satisfying, high-quality menus that highlight the natural flavors of each ingredient.
2. Important Rules : Policy for Special Dietary Requests
To ensure a safe and comfortable environment for all guests, Keiryuso Siorie has established the following policy under the advice of municipal advisors and food safety experts. We kindly ask for your understanding and cooperation.
① Reservation Deadline: [At Least 5 Days in Advance]
If you require specialized meals—including Vegan, Vegetarian, Halal, Gluten-Free, or specific Food Allergy accommodations—please notify us at least 5 days prior to your check-in date.
Please Note: Requests made on the day of arrival or shortly before check-in cannot be accommodated due to kitchen operations and safety controls.
② Kitchen Environment Disclaimer (Cross-Contamination Policy)
All meals at Keiryuso Siorie are prepared in a single, shared kitchen using shared cooking utensils and equipment.
We cannot guarantee 100% allergen removal or complete prevention of trace cross-contamination (including airborne wheat flour or trace ingredients).
For guests with strict religious Halal requirements, severe/life-threatening food allergies, or Celiac disease, we may respectfully decline meal service to prioritize your personal health and safety.
③ Personal Food Preferences
We do not accommodate menu modifications or ingredient substitutions based solely on personal food preferences or dislikes. Adjustments are strictly reserved for allergies, religious requirements, or ethical lifestyle choices (e.g., Veganism).
3. Early Morning Hikers: Breakfast Bento Box Option
During the Kamikochi season (April 17 – November 15), guests departing early in the morning by bus or taxi can switch their traditional hot-pot (donabe) breakfast to our Special Breakfast Bento Box (designed to be easily warmed in your room before departure).
Bento Box Reservation: Please notify the front desk by the evening before your stay.
Dietary Needs for Bento Boxes: If your bento box requires Vegan, Gluten-Free, or Allergy adjustments, the 5-day advance notice rule still applies.
