Winter Dining: Fresh Seafood Creative Kaiseki Inspired by "Buri Kaido"
This winter, our new Head Chef introduces an extraordinary menu inspired by "Buri Kaido" (the historic Yellowtail Road)—a celebrated trade route that historically brought fresh seafood from the Sea of Japan through Toyama and Hida into the heart of the Shinshu mountains.
Savor the finest seasonal seafood delivered directly from the coast, exquisitely crafted into imaginative multi-course Kaiseki dinners. It is a rare and sophisticated culinary experience where mountain hospitality meets the ocean’s freshest harvest.
