Welcoming Our New Executive Chef

Hello from Keiryuso Shiorie.

Today, we are delighted to share some exciting news with you.

We are pleased to welcome a new Executive Chef, marking the beginning of a new chapter for our kitchen and our inn.

Our new chef has spent many years refining his skills at traditional Japanese inns across Japan.

When we asked why he chose Shiorie, his answer was simple:

"I wanted to settle down and create my own cuisine here."

He also shared another dream:

"I want to create original dishes that people will remember, and I believe Shiorie is the place where I can achieve that."

He has also been joined by one of his apprentices, who is equally passionate about cooking and brings a bright, positive energy to our kitchen every day.

Our chef especially enjoys creating original seasonal dishes inspired by local ingredients and Shinshu's rich culinary traditions.

One phrase he shared with us has stayed in our hearts:

"A meal is like a story."

From the first appetizer to the final dessert, every course should flow naturally into the next, creating an unforgettable dining experience.

He also believes that this story cannot be created by the chef alone.

It comes to life through the teamwork of everyone involved—from the kitchen to the staff who carefully serve each dish and share its story with our guests.

We couldn't agree more.

We're also grateful that the experienced members of our kitchen team, who have supported Shiorie for many years, continue to work alongside our new chef.

Together, our new Executive Chef, his apprentice, and our longtime culinary staff are building a new chapter for Shiorie's dining experience.

This is only the beginning.

As we move forward, we will continue learning and growing—not only by creating memorable seasonal cuisine, but also by expanding our ability to welcome guests with diverse dietary needs, including vegan, gluten-free, and, in the future, halal-friendly dining.
